King George Whiting

Where: Sand patches, shallow reef
Season: Year-round · Bigger in winter
Tip: Pan fry whole fillets in butter. Simple wins.

Squid (Calamari)

Fight: More about technique than power
Taste: ★★★★★
Where: Shallow weed beds. Deep offshore for the monsters
Season: Peak in cooler months
Tip: Quick flash fry. Don’t overcook — ever.

Flathead

Fight: Subtle, but satisfying
Taste: ★★★★
Where: Sandy bottoms
Season: Year-round
Tip: Beer batter or crumbed. Hard to beat.
